Inspired by the home cooking of his grandmother who used to cook each and every morning, our Executive Chef prefers to be creative in the kitchen amidst the pots and pans and the smell of the kitchen rather than being on the administrative side of Food & Beverage.
The Chef oversees with passion every little detail, an example of this is his discovery of one of the worlds' finest Olive Oils, the "Valle de Guadalupe" during one of his trips to the Baja California region in North Mexico, this artesian olive oil is old-fashioned produced in small amounts and it has a very limited availability.
Paraiso de la Bonita smokes its own foods, plus freshly squeezes its own fruit juice daily, as well as, making its own ice-creams, sherbets, bread and pastries; from croissant and pain au chocolat to baguettes. Every day, guests can sample the 'Ice-Tea of the Day' such as "Four Berries" and "Chamomile & Mint", which is liberally served throughout the resort. Specialist foods include: cactus, pumpkin, chayote (mirliton), vanilla pods, epazote (aromatic herb, Mexican tea), hierba santa (aromatic herb) and the Bougainvillea flower.

4 Elements Dinning Experiences
For another exciting gourmet experience, there's the new 'Four Elements Dining Experience'. Taking inspiration from the classical Four Elements (Earth, Water, Air and Fire), guests can select exclusive dining menus, and enjoy these in unique locations, e.g. The Earth menu takes place on the white sands of the property's beach by the water's edge. Water menu allows guests to enter the central swimming pool, where their feet are immersed in water, as they dine on gourmet seafood and water-thriving ingredients. The Air menu takes place on the property's private dock overlooking the 48-foot catamaran and the turquoise Caribbean Sea. The 'Fire' menu consists of private dining outside of the 'Temazcal' dome, where a Mayan ceremony and sauna takes place twice weekly. The menu is inspired by chilies and hot spices.
